Kid friendly recipes and tips with leading dietitian Susie Burrell



To celebrate Smart Eating Week during February 11-17, Mayver’s has compiled its most popular, kid-approved healthy recipes.

 

Leading dietitian Susie Burrell says getting children to eat healthy (and enjoy it!) can be a challenge, however there are ways to make it easier.

 

It’s important to include kids in the kitchen to encourage healthy eating choices from a young age,” she says.

 

When kids are actively involved in something and given responsibility, they’re far more likely to stay interested and excited.

 

Parents attitudes towards food and cooking can also play a big role. Encouraging them and showing them how fun cooking can be helps build their enjoyment and curiosity.”

 

Susie’s mum hacks for picky eaters

  • Involve them in cooking and baking healthy treats. Ask them what they’d like to cook or who they’d like to cook for.

  • Have a fun activity looking at all the different types of fruit and veggies and hold your own taste test.

Peanut Banana Popsicles



Serves: 4

Ingredients

2 Medium ripe bananas

1/2 cup – Mayver’s Peanut Butter 

1/2 cup – Plain or vanilla low-fat yoghurt (or coconut yoghurt for a vegan option)

1 Tbs – Honey or maple syrup

1 Tbs – Chia seeds

1/2 Tsp – Cinnamon 

Method

  1. Add all ingredients to a food processor and mix until mixture has a smooth consistency.

  2. Pour mixture into popsicle moulds until full, then insert the popsicle sticks.

  3. Place moulds in the freezer for at least four hours.

  4. To serve, run moulds under some hot water for a few seconds to release the popsicles from the moulds.

  5. Enjoy!

Satay Chicken Jacket Potato



Serves: 2

Ingredients

2 large sweet potatoes

1 tablespoon coconut oil

400g chicken mince

2 cloves of garlic, crushed

1 teaspoon ginger

2 tablespoon tamari

4 tablespoon Mayver’s Dark Roasted Peanut Butter or Tahini

To serve:

2 spring onions, thinly sliced

1 chilli, thinly sliced (optional)

Micro herbs to garnish

Method

  1. Preheat oven to 200°C and line a baking tray. Cook the potatoes whole, for 60 minutes or until tender and soft when cut with a knife.

  2. When there is 20 minutes to go, start making the chicken satay.

  3. Heat the coconut oil in a fry pan and brown the chicken mince. Add the garlic, ginger, tamari and peanut butter or tahini and mix to combine. Allow to simmer on low heat for 10 minutes. If your mince is getting a little bit dry, add a splash of chicken stock to help keep the moisture in.

  4. Cut the sweet potato in half and add half the satay to each potato. Garnish each with half the spring onion, half the chilli and half the micro herbs.

Banana Nut Bites



Recipe by Susie Burrell

 

Ingredients

2 mashed bananas

1 cup Mayver’s Peanut Butter

1 cup oats

Shredded coconut

Method

1) Blitz bananas, peanut butter and oats together in food processor

2) Roll into balls then roll in coconut to cover

3) Put in fridge for two hours to set

 

Notes

For a chocolatey twist, add some cacao powder or substitute regular peanut butter for Mayver’s Organic Peanut & Cacao Spread.
